Easter is over. The eggs have been colored, hidden and hopefully found. Now what to do with all those hard boiled eggs? We love egg salad, sliced egg sandwiches and Deviled Eggs but sometimes we get bored of the same old, same old... I've rounded up a few fresh ideas to inspire you to use up those eggs and not let them go to waste. What I like most is that these are healthy ideas that will help us keep our girlish figures!



With Style and Grace twists up your traditional egg salad by adding avocado, lime and cilantro - a dash of salt and pepper completes these fulfilling little treats.



Paula Dean kicks hers up with a BLT twist - fresh parsley, tomatoes and bacon will make these Deviled Eggs even more devilish!



Girl Makes Food adds carrots, avocado, cucumber and tomatoes to her eggs to give them a refreshing bite. This can be a satisfying lunch, a hearty snack or a great accompaniment to a fish or chicken dinner.



Bev Cooks has this amazing crab salad with celery on her blog. To me this says less Easter and more Summertime on the shore of the New England Coast! Bring on the summer... and bring me a large bowl of this too, please!



I adore a good salade Nicoise... They always bring me back to my childhood summers in the South of France. A traditional Nicoise is made from canned tuna,  (in oil - you will taste the difference, trust me!) tomatoes, green beans, Nicoise olives,  (though Kalamata will do) potatoes and hard boiled egg. There are many variations. Some prefer to use a fresh seared tuna or a piece of fresh salmon. Nom Nom Paleo creates another version and uses crab meat instead. You can use your eggs in a heart Chef or Cobb Salad, or top off a Caesar salad with egg instead of chicken. Or add the cooked yolk of an egg to your basic vinaigrette - It works as an emulsifier.

11 Simple and Inspired Easter Egg Ideas

My kids love to decorate eggs. We've been known to break out the food coloring throughout the year. Something as simple as a bowl of pastel colored eggs adds such a nice decorative touch - whether to your Easter decor or to your home, no matter the time of year. I prefer to stick to the more simple - but simple doesn't have to be boring. And simple can extend far beyond a pale pink, yellow or blue egg. As I scouted out ideas that appealed to me on a visual level, keeping in mind the skill set in my home - ranging from 8 to 15 years, I wanted ideas that were easy enough for the littlest hands,yet challenging enough for the older two. I wanted a project that would hold the attention of an 8 year old and yet not bore two teenagers while staying away from neon-rainbow-psychedelic hues that would potentially potentially spill all over the place because in my house, if it can spill and stain, it will spill and stain!

Pictured below are projects that I know would appeal to us and thought they may appeal to you as well, simple with a slight sophistication and enough whimsy to interest to a child. You'll notice that some of these eggs have been colored while others have been decorated yet their colors went unchanged. I love the golden touches, and while glitter is fun I personally try to keep far far away from it - more mess and we find it everywhere for months on end! I love the naturally dyed eggs, and the eggs that stick to simple tones. Decoupage adds more detail but it's an art-form that looks as well imperfect as it does when it's perfected. Put your twine and rubber bands to good creative use and break out the Sharpies to create fun patterns and write endearing messages. Fingerprints and confetti will also give your eggs a creative and personal touch.

An Easter to Remember


I hope you all had a lovely day with with family, friends and beautiful weather!

Since our Easter baskets were still filled with goodies we used decorative bags to collect our eggs...


Mommy finds some good hiding places this year!


















But alas the kids are clever and fast! And they want the hunt to last longer... so instead of hiding the eggs all in the back we moved to the front of the house... and so the hunt would last a little longer instead of picking up any hidden egg, the children were assigned colors. Alexander had the pink and orange eggs, Rebecca had the purple and blue eggs and Christopher would look for all the yellow and green eggs. What a genius idea! Each child was responsible for gathering 13 eggs. We'll have color-coded Easter egg hunts from here on in!




It was so glorious out that I decided that the boys did not need to wear their navy blazers and let the kids break out the flip flops! After all this weather is unusual for us. We are usually bundled up, even in snow gear on Easter. This weather is to remain the next few days. It is so wonderful!

But she is pretty darned cute and his proclaimed this her favoritest Lilly dress -- Ever!!


We had stopped off at nursery to pick up some flowers and Rebecca, listening to her iTunes, is clearly annoyed with me... for something, though I am not sure what!




Grandma's Easter Bunny brought lots of outdoor goodies and how nice it was that the kids could go out and play!







and my sister in gave me this beautiful rhododendron "tree"! 

Easter Eggs for the "Crunchy" Crew!

Alexander loved the tie-died eggs. Could not stop making them. I think they look lovely too. In fact, I think they look more like little presents with ties than tie-dye.




To make them is simple.
All you need is a handful of rubber bands and your egg coloring.
Wrap several rubber bands around the eggs, in one or two direction and color the egg as desired.
When the color has been achieved, carefully rub the excess coloring off to dry the egg.
You can either set the egg aside for display or dunk the egg, sans rubber band into another color.

And then you can fire up the grill and make some yummy burgers to celebrate Spring and the wonderful warm weather!

Easter... A day in pictures.

We had a lovely Easter at home this morning. The kids were up before the sun ready to look for their baskets and hunt for eggs. I shooed them off to the play room and told them to stay there until 8:00. At 7:30 we led them into the living room to see what the Easter Bunny had delivered overnight. An hour later we ventured outside into the blustery, frigid temperatures to look for hidden eggs. There were a total of 36 hidden. Some filled with a few m&ms, some a Dove egg and some were empty. Each child was to have found a dozen eggs. But two are still missing!

We enjoyed a lovely morning before heading to New York to join the in-laws and cousins.

Above, Rebecca's basket filled with some yarn for knitting, a few packages of beads, a small chocolate Lindt bunny (I know! I know!) and one of those balls at the edge of a long rope that is attached to a ring that you place around your ankle... you are supposed to jump over the ball. And some bubbles.
Christopher got 2 Star Wars Lego toys, a large package of Pokemon cards, some bubbles and a foam airplane that flies and shoots bubbles.
Alexander's basket was filled with a couple of Little People Easter figures and Matchbox cars, bubbles and the airplane bubble machine. Yes, both got small Lindt bunnies despite my initial idea to keep the baskets candy-free. I think I did a great job of that none the less!















Our Decorating Egg-stravaganza!

We've been busy this morning. First the kids all made watercolor resist pictures. They drew pictures with white crayon on white paper and then applied water colors to the paper to create some wonderful pictures. Then we colored our eggs. I bought 3 dozen eggs... I figured that would keep us busy enough! We had a great time and I love the way our eggs turned out! See below to learn how to achieve some of the unique results! Ok... now I am off to bake because the kids want to decorate cookies. I'm glad they are busy and having fun and being creative but all this fun is tiring me out!



This egg was created by first dipping drawing an image on the egg in white crayon then placing the egg in yellow food coloring, then placing it for a much longer time in the blue food coloring.



After we had dyed most of the eggs we added a little bit of cooking oil to some of the colors. We took a white egg and dipped it in blue and purple. I love the speckled look the cooking oil gave the egg.



This white egg was also dipped in to the blue that had the cooking oil in it.




As was this. But first we took an egg let it soak in pink food coloring and then soaked it in the blue coloring with the vegetable oil.



This egg was an accident! I took a pink egg and placed it in orange. I had just added an extra color tablet to the yellow and it hadn't quite mixed in. Looks like a sunset!


We took a pink egg and dipped in purple for various lengths.




A light blue egg dipped in purple on one side and green on the other. We found that adding extra food coloring and extra vinegar made the colors super vibrant. And if you make a mistake everything can be washed off with soap and water!




Here we cut our shapes from thin masking tape and applied it to the egg as decals. The egg was then dyed green and the tape was removed for a batik-y effect.




One white egg dipped in yellow on one side, then blue, then green. On the other side dipped in pink and purple.

Here a white egg was dipped in yellow then taped with thin masking tape, then soaked in pink then purple food coloring. The tape was removed to give the egg this very cool effect.




What happens when you dye brown eggs pink then yellow? This lovely red! We'll definitely dye more brown eggs next year. We only dyed two this year. They happened to be sitting in the fridge.



White tape was cut into shapes and then applied to the egg. The egg sat in pink food coloring and the tape was removed.



Our Most Egg-cellent Day!








I felt terribly when I dropped Alexander's Easter cupcakes yesterday. On the floor. On the garage floor! Splat... He made two cupcakes at school and he was so looking forward to eating one when he got home. He was disappointed. He was sad. But I was amazed that he didn't have a tantrum. That he didn't shed a tear. I certainly would have. I wanted to. I felt terribly and told him that we would make some new ones. Tomorrow.

Well, as of Midnight tomorrow became today. And I had a promise to keep. Since both boys were a little sad that Rebecca had a play date and they didn't I told them that I would be their play date and we would have a great day!

We took Rebecca to her friend's house then went out in search of cake mix, frosting, m&ms and other decorating goodies. Since Wendy's was just down the street I took the boys there for lunch. It is Christopher's most favorite place ever. And since I don't let my kids eat fast food much, I decided that today would be the day. What more could he ask for? A day with Mommy and Wendy's and decorating Easter cupcakes? Nothing could be better than that!

After lunch we came home and I sent the boys to the playroom while I baked the cupcakes. Yes, right out of the box. After all, we know the kids will eat the candy and the icing and toss the cake part... so I'm not going to much effort on that part!

I set all the goodies out on the table. I had some m&ms together in a bowl, and the rest were all separated by color. We had the frostings, the sugar sprinkles... everything ready to go. Once the cupcakes were cooked and cooled they were ready to be decorated... Didn't they come out great?
I'm so proud of my boys and I had an equally wonderful day as well. Tomorrow, the cookies!

So I seriously wonder what's going to happen tomorrow -- what's going to go wrong because today was such a spectacular day. And when this happens, I can be sure that the next one will be a doozie. But I will think happy thoughts to make sure this doesn't happen...

I woke up to more grey skies. I had to find something appropriate to wear on my "date!" I wanted to look good as I was actually stepping foot out in public, but wanted to be comfortable and dress appropriately for the cool, overcast weather. I settled on a black long-sleeved T shirt from Banana Republic. (I've you've never bought Tshirts from Banana before do. They are wonderful!) A long black cashmere cardigan and soft white jeans. I tossed my not-so-clean hair in a pony tail, threw on some pearl earrings and my favorite shoes, a pair of leopard print mules worn and loved so much they are starting to wear a little too thin. I need to find a good cobbler. I simply cannot toss a good pair of shoes aside. Not my favorites. I am too sentimentally attached to them. They will come to my grave... and I digress...

As I was getting the kids' breakfast ready (warm oatmeal, not instant) the sun started to poke through. I could tell it was going to be a glorious day after all. After I got the kids to school I headed to meet KK at Starbucks. I got there about 5 minutes earlier to scout out the good real estate (aka the good, comfy seats) placed my bag there and proceeded to order my grande cappuccino.

She walked in and it was like looking at an older version of Pinkie and Miss Priss. Wow! We hit it off immediately and did not stop gibberjabbering until about 2 hours later when I head to head off to pick up Alexander from preschool. We talked about everything under the sun. We talked about New England and Connecticut and The South. We talked about our kids and our spouses and our homes and we talked about our blogs and our blogging friends, at yes, we talked about you Semi-Slacker! We talked and we talked and we talked and we learned that we had so much in common. It was so neat to meet KK and I'm sure we'll get together again in the very near future and talk about y'all again. (Look, her accent has worn off on me!)

I brought my camera as I always do. I am SUCH a dork and asked a lovely young lady if she would mind taking our picture...

I was a little late in getting to school to pick up Alexander. But I wasn't the only one. We went to Target to pick up some jelly beans for his class, and I picked up a few non-exciting items for home... hand soaps for downstairs bathrooms and kitchen, bubble bath, dishwasher detergent, sugar, 3 dozen eggs (for .99 a dozen!) and a a bag of Dove chocolate eggs. I really wanted to pick up another dozen or so plastic eggs since most of ours have mysteriously disappeared but there were none. NONE. How crazy is that? How ridiculous is that? There were Star Wars eggs and Bionicle Eggs and these eggs and those eggs but I didn't want them. All I wanted were the regular plain ol' plastic eggs. Arghhh... and I still have nothing for my Easter Baskets save the for bag of Dove eggs because Daddy said I had to have some chocolate in their baskets... So we'll have an egg hunt but instead of the plastic eggs I'll use the real eggs that we colored and we won't find them all and then we'll attract even more wildlife as they smell the wonderful aroma of rotting ova... lovely... Just lovely...

Somehow while at Target I was suckered into buying Alexander a Tonka fire truck. A plastic $5 doodad that makes noise and rolls. No biggie but he does this all the time! When we got back he played with his new truck and then he had a bath. Because he needed one and wanted one and what else do you do smack dab in the middle of the day? This was followed by lunch which was followed by a trip back to school to get the other two, which was side-tracked by Rebecca's girl scout meeting that I had completely forgotten about so I let the boys play in the playground after school and at that point the sun had left and nothing was left but clouds and grey sky and I was not dressed appropriately and I was cursing myself for forgetting both the meeting and my coat!

Finally we got back home and I got the kids settled with their homework and dinner and pajamas and cleaned the dining room and living room. I even had time for a bath with my tea and my book. Dinner was coming to me! My book club was coming to me! How lovely... like a catered affair!

My friend Susan came with her green leCreuset pot filled with French Onion soup and a baguette of crusty bread and shredded Gruyere and a mache salad with cranberries and goat cheese and these wonderful little French patisseries!

We talked a good bit about the book and all agreed that this was by far the best book we had all read in a year, maybe even two. We talked about the author and the characters and the illness at length -- for us! We then talked about all the other stuff that we love to talk about... marriage and friends and children and life and food and aging and pregnancy and our children growing up and how it happens so quickly and how boys are vastly different from girls and and which child is the peacemaker and which is the comedian and which one is the drama star... we talked about friends and acquaintances and restaurants and food and about other books and both those we want to read and those we read in the past and we talked about broken computers and we talked about our parents and our siblings and time off and father parenting versus mother parenting and as usual our conversation was fluid and seamless and fascinating. We ate and talked and drank and ate and talked and drank. We never even made it in to the dining room. We were all seated around the coffee table, Japanese style and I thought it would be more fun to eat dinner that way, on the floor, casually. And everyone agreed. It was fun and cozy. And only something you can do with your close girlfriends.

The kids were good, very good, I have to admit. The older two took turns between watching television and playing on the computer. Alexander hung out with us and ate French food. At 9:00 I sent the troops upstairs and they did not argue or bat an eye. They got ready for bed as they were told. Rebecca even out Alexander to bed and by the time I came up to tuck them all in and kiss them all goodnight he was fast asleep!












Speggtacular!



Before I start I want to tell you how utterly pissed I am... I had all these How To Pictures for you with step by step photos. I downloaded then on to Picasa and somehow they are gone. All of them. Mysteriously disappeared. Even the picture of the eggs hanging from the kitchen light fixture which was pretty funny! Well, they didn't mysteriously disappear. I must have accidentally deleted them when I was cleaning out my unwanted pictures. Ugh!

But above a pictures of the finished product and I like them so much I am going to go out and get more eggs, in more sizes and more glitter!

Alexander wanted to do a project involving glitter and I had some foam eggs I had been dying to do something with, so that's what I did.

You'll need:

foam eggs, as many as you would like, in the sizes you desire -- available at most craft stores
Craft glue such as Mod Podge
Glitter (I think Martha Stewart's is the best. It is pricier but it is superfine and therefore goes a long way. It is easier to work with and I like the result better.)
A couple of large paint brushes or foam brushes
A (plastic) bowl for the glitter
A (plastic) bowl to pour some Mod Podge

Line your workspace with newspaper, lots of newspaper! You might want some wet some wet paper towels to keep by your work area... hands get awfully sticky!

Paint the foam eggs with glue, be sure to cover all parts very well.
Roll the egg in the glitter. If you can't cover the entire egg use your hands or a spoon to sprinkle the glitter on to those areas in need. When egg is covered, give a light shake and set aside.

OR you could

Pour some of the glitter mixture directly into the glue. Mix well and paint the eggs with the glue mixture. Cover all areas well. If you choose to do this method you can eggs of varying shades of your color by changing the amounts of glitter you used. Set aside to dry. (I did both methods.)

Once all eggs have been painted you will need to hang them to dry properly without sticking. I was able to use my kitchen light fixture as the perfect hanging tool! I gathered up some push-pins and some inexpensive wrapping paper ribbon that I cut into equal pieces. I attached the ribbon to the eggs using the push pin at the top of the egg. I attached eggs to both ends of the ribbon and let them hang to dry. You could string the eggs to dry over a hanger and then hang the hanger (not near a wall or in your closet!) After a couple of hours your Speggtacular Creation should be dry!

You may want to, and I did, spray the eggs with a matte or gloss finish to help keep the glitter from overtaking your home, which it will, for the day, anyway!

Now I am off to get some more eggs and some of that shredded crinkly paper to place under them!

NB. This is a fairly messy project which requires a good bit of supervision for a younger child.
