I wish you all a wonderful weekend with friends and family and food and fireworks and fun! Be safe!

What are your plans? Will you watch the rockets red glare, bombs bursting in air?

We have plans with friends to hit the beach late afternoon. We'll stay there until it's dark, and around 9pm our town will set off huge fireworks off the barges off the beach. It's a magnificent spectacle every year. It's hot and crowded and dusty, but magnificent nonetheless! 

We're all bringing food, a great big potluck, nothing fancy or complicated. Just lots of appetizers that can be picked on throughout the late afternoon and evening. I plan on making some of the Tomato, Basil & Boursin sandwiches I made the other night. I will cut them into 1 inch strips and stick little flags into them for a festive touch. There will be water and lemonade for the children and I am thinking we'll need a celebratory beverage for the adults. I'll do a red, white and blue version of my La Jolie Grandmere's Coupe de Champagne. This is a delicious and festive beverage that we served at my wedding reception.


Coupe de Champagne
1 handful strawberries, quartered or raspberries
1 handful of blueberries of blackberries
1/2 white peach, sliced, skin removed

Let the fruit soak overnight in 1/2 cup of Cointreau or Grand Marnier

Just prior to serving add the fruit and liquid into a pitcher. Add a bottle of champagne or Prosecco.
Pour into champagne glasses (though at the beach we will pour into clear plastic glasses) allowing a little bit of the fruit to flow into each glass. 

When the pitcher is emptied add more champagne to the pitcher.
